Top Secret Recipes – Cracker Jack
What you need- cookie sheet, saucepan, cooking thermometer
Ingredients-
· 4 quarts popped popcorn
· 1 cup Spanish peanuts
· 1 cup brown sugar
· Half stick (4 tablespoons) butter\
· Half cup light corn syrup
· 1/8 cup molasses
· ¼ teaspoon salt
1. Preheat oven to 250°F
2. Mix popcorn and peanuts on cookie sheet and place in oven
3. Combine the rest of the ingredients in saucepan
4. Place on stovetop at medium heat and bring to a boil, while stirring
5. Using the cooking thermometer, check for the mixture to reach 260°F, or the “hard ball stage.” This will take about 20 to 25 minutes
6. Remove the popcorn and peanuts from the oven and quickly pour the mixture in the pan over them. Place back in oven for 15 minutes. Mix well every five minutes, so all the popcorn is coated.
7. Cool and enjoy! Put what you don’t eat in an airtight container.
